Is the cucumber craze just a passing fad, or is there real nutritional value in eating a whole one every day? Let’s dive in.

When I was a kid, my dad grew TONS of cucumbers in the garden. At least half were intended for pickling, but the other half grew up big and plump.

And plentiful. Really plentiful. It got to the point that he was so good at growing them I would go around to the neighbours with bags full to give away. And we ate them for lunch and dinner every day all summer long.

That would have been OK, except they were always sliced and dressed with the same oil and vinegar dressing. Twice a day. Every day. For three months.

That was then. Since then, I’ve discovered a whole range of flavours other than white vinegar and vegetable oil. Balsamic and olive oil? Yes please! Our family now goes through cucumbers every week with no complaints, and it turns out that’s a good thing.

Cucumbers have been enjoying a surge in popularity thanks to TikTok’s “cucumber a day” trend. While it might seem a bit much to consume an entire cucumber daily, there are undeniable benefits to incorporating this refreshing vegetable into your diet.

Nutritional Powerhouse

Packed with water, cucumbers are excellent for hydration. They also contain essential nutrients like vitamin K, potassium, and magnesium. Plus, they’re low in calories and a good source of fiber, making them a great addition to any weight management plan.

And don’t ignore the peels! They’re perfectly edible and packed with nutrition as well. When we blend cucumber into a vegetable smoothie, we just wash it well and blend it whole. Peeling in different patterns can help dress up a salad or plate too, while helping retain some of that crunch!

Growing your own cucumbers is a fantastic way to reduce your environmental impact. However, consuming a whole cucumber daily might lead to food waste. To enjoy cucumbers sustainably and creatively, consider these tips:

  • Variety is key: Experiment with different cucumber varieties and preparation methods.
  • Preserve for later: Try pickling, fermenting, or making cucumber-infused water.
  • Compost leftovers: If you can’t eat the whole cucumber, compost the peels and trimmed parts like stems.

Ingredients:

  • 1 large English cucumber, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions:

  1. Combine all ingredients in a blender and puree until smooth.
  2. Season with salt and pepper to taste.
  3. Chill for at least an hour before serving.
  4. Garnish with a dollop of Greek yogurt, a sprinkle of red pepper flakes, and a cucumber slice.

Cucumber Salad with Feta and Mint

A simple yet flavorful side dish that highlights the cucumber’s crispness.

Ingredients:

  • 1 large English cucumber, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine cucumber, feta, and mint.
  2. Whisk together vinegar, olive oil, salt, and pepper.
  3. Pour dressing over salad and toss to coat.
  4. Serve immediately.

Don’t forget to add slices to water, cubes to salads, and of course run them through the juicer! These seemingly humble vegetables are really in peak right now, and we just can’t get enough!
